Chermoula is the North African wet spice mix favourite of the new world. It is a clever combination of the heady robust flavours of cumin, coriander and sweet spices with lemon and garlic.
The perfect combination for tagines, stews, soups, braises, roasting lamb, beef, rabbit or veal, grilling or barbecuing poultry, especially chicken and quail, and vegetables. Also excellent when used as a marinade and diluted with olive oil for fish, chicken, rabbit and lamb.
